We’ve been on the lookout for some amazing fall recipes for our friends to try this fall and have come up with what we think are some real winners!

The hardest part is peeling and cutting up the squash*, but once that is done, the rest is easy and so well worth it. We love the goat cheese garnish.
*If you have trouble with peeling and cutting, poke the skin of the squash all over and microwave for 2-3 minutes.
